Peanut Butter-Pretzel-Chocolate Bites


I made these little guys for a potluck birthday party last week! I think they were pretty deeelish just for a fun and easy little treat, but I would change the peanut butter filling next time. It was a little too sweet... and NOTHING is ever too sweet for me, so it's really saying something! Also the brown sugar stayed a tiny bit gritty in texture. I'll update you with changes if I decide to make them again!


Peanut Butter Pretzel Chocolate Bites

1 cup creamy peanut butter
2 tsp butter, room temperature
2/3 cup powdered sugar
3/4 cup light brown sugar
1/4 tsp vanilla extract
Pretzels
2 cups bittersweet chocolate chips and canola oil
In a small bowl, beat the peanut butter and butter together until smooth and creamy. Beat in the powdered sugar, light brown sugar, and vanilla extract until well mixed.
Roll teaspoons of the peanut butter mixture between your palms to form balls. Sandwich between two pretzels and put on a cookie sheet. Freeze the pretzel sandwiches for half an hour.
Melt the chocolate chips, using the microwave (30 second intervals). Once melted, add a teaspoon of vegetable oil to the chocolate and stir. Continue adding until your chocolate is perfect dipping consistency. Dip half of each pretzel sandwich in chocolate. Return the tray to the freezer and chill until the chocolate sets. Store the Peanut Butter Pretzel Bites in the refrigerator until serving time. 


Refreshing Cuc/Tom/Feta Salad


I was burning up alive and simply sturrving when i got home from running errands today, so i whipped up this super quick, ultra-refreshing salad.

Cucumber
Roma Tomato
Spoonful Feta
Splash Olive Oil
Splash Red Wine Vinegar
S & P

Whip it up and enjoy!

Peanut Butter Banana Bread


This happened in my kitchen today.

Mexican Scramble

THIS is a Mexican Tofu-Egg Scramble. It looks terrible, i know, but it is my fave go-to bfast! You could make this bad boy out of all egg or all tofu, but i looove half of each. Just think of eggs when you measure out your tofu. I season my tofu with S&P, Cumin, Coriander, Chili Powder and Crushed Red Pepper Flakes (cause some like it hot). Don't worry about the moisture in your 'fu. Saute up the tofu with some garlic until it's heated, and I added mushrooms this time cause I had em. Then scramble an egg in until it's all good and cooked. Top with cheese, sour cream, salsa, whatever you got. Que Delicioso!

Roasted Peaches

These babies are sent from heaven (and the easiest dessert you'll ever bake).

Healthy Topping:
Dollop of Greek yogurt
Splash of Orange Juice
Pinch of Splenda

-Mix em all up together. You could of course use whipped cream or mascarpone, but I promise that mine is real tasty....

PEACHES

Slice one peach in half, remove pit. I sprinkled cinnamon on both halves. Then tried a sprinkle of sugar on one half, and a drizzle of honey on the other. Bake at 375 for 20 minutes until the top is brown and crystallized (i did this in my toaster oven! watch your peaches). Insert a sharp knife to ensure the peach is tender throughout. OHMAGOD so. good.
